I am trying to make to adjust the size of the room in Easy View to match the actual size of the venue. I am changing the size and location on the location/size tile but it will not change or move.

The stage I am trying to program for is 2,024 which is significantly larger than the 1000x1000 CM limitation put on the default room. Is building the stage outside of the room the only work around?

You can adjust the Stage Size setting from the Settings screen of the 3D Visualiser (the symbol of a cog wheel, 5th button from the top left corner).
